Candied pecans on sweet potato toast

Here’s an easy, guilt-free take on the classic holiday dish (sweet potato casserole). Did we mention it takes only 5 minutes?

Ingredients
 1 medium sweet potato, sliced
 1 tbsp maple syrup, honey or sweetener of choice
 4 tbsp pecans, or any seed/nut
 1 dash of cinnamon, to taste
Optional
 dash of vanilla extract, to taste

Slice sweet potato length-wise, like toast pieces

Microwave covered for 3-4 minutes until tender.

While microwaving
Heat a pot on medium-low. Mix in the rest of the ingredients and cook for 1-2 minutes while stirring frequently - we're reducing the water so it becomes candied.

Drizzle it onto the sweet potatoes and enjoy!
